While other copycat recipes use dried or bottled Ranch dressing, this recipe is all home made. Also, it is good to know that any spice added to the dressing is likely to increase in intensity the longer it sits! Tomatillos are found in the refrigerated section of the produce department. They look like small green tomatoes when peeled and are covered in a paper like skin. When purchasing fresh tomatillos, look for fruit that is firm to the touch, the squishy tomatillos are most likely overripe or damaged! Make sure to thoroughly wash the tomatillo after peeling as stated in the recipe as they usually have a bit of dirt and oily film on the skin.

All you need to make this tasty dressing is 5 minutes of time and a good blender or food processor. If you like the flavor tomatillos add, feel free to use I personally prefer making this dressing a day or two ahead of when I want to use it, because then it has time to sit in the fridge and let the flavors all combine. And this tasty dressing is low-carb, low-glycmeic, gluten-free, and South Beach Diet friendly! Every place has its own food culture, and if you live in Utah, Cafe Rio is a big part of that culture. Back in an anonymous commenter left the tip of roasting the tomatillos before using them in the dressing. Watch them, and remove when they start to get barely browned. Remove large stems from the cilantro, wash and spin dry or dry with paper towels, then finely chop it in the food processor. Add the tomatillos, garlic, lime juice, and Green Tabasco sauce or jalapeno pepper and process about 30 seconds, until ingredients are finely pureed. Then add the 2 cups of Ranch dressing and pulse a few times, just until ingredients are well combined.
